Sprouted Moong Salad

This refreshingly healthy and delicious salad is very versatile. Have it as a snack, as a side dish at your meal or make it the main event at breakfast or lunch.

2 cups sprouted moong

½ red onion, diced

2 tomatoes, diced

1 cup diced cucumber

1 tbsp lemon juice

¼ cup coriander, chopped

1 tsp chaat masala

Salt and pepper to taste

 

  1. Steam sprouted moong for 5-7 minutes until fully cooked and cool. (Click here to see how to sprout moong daal.)
  2. Combine moong, onions, tomatoes and cucumbers in a large bowl.
  3. Add lemon juice, coriander and chaat masala to bowl, mix thoroughly.
  4. Add salt and pepper to taste.
